Finca El Yos

Café Rivense del Chirripó is a family micromill founded by Régulo Ureña and Isabel Rojas in 2005, located in southern part of Costa Rica, in Brunca region settled in a micro-region called Chirripó.
During the morning and part of the afternoon, the coffee is picked when the cherries have a red-purple color, it is delivered to the processing area in the afternoon and the pulp is removed by a machine, without any use of water, and transported to beds in baskets. The coffee pre-dries in the beds for 5 days, and the drying process is finished in a static mechanical drier, using an average temperature of 35~40° Celsius for 48 hours, until it reaches 10% of moisture content.
