Dancing Goats selected a washed lot from Odo Shakisso in Ethiopia’s Guji Zone, a landscape shaped by pioneers like Tesfaye Bekele of Suke Quto who helped put Guji’s elegant profiles on the map. Farms here sit between 1,800 and 2,200 meters where cool nights and rich, volcanic soils slow ripening. That extra time in the cherry typically builds sweetness and a clean, high-toned acidity that shows so well in washed Ethiopian coffees made from local landrace varieties.
Processing keeps the focus on clarity. Ripe cherry is carefully sorted, depulped, and washed, then dried to preserve a light, silky body and a precise citrus frame. The roaster describes the taste as white grape, nougat, and orange marmalade. In the cup, it tastes sweet and bright with gentle florals in the background. It might remind you of crisp white grape, orange peel and jammy citrus, and a soft nougat-like sweetness that rounds the finish.
