Chelbasa One

Chelbasa One is a washed coffee carefully assembled by Little Wolf Coffee. The roaster partnered with the Chelbasa One Washing Station in the Gedeb zone of Ethiopia and with SNAP Specialty Coffee to bring this lot to life. Farmers from the region deliver cherry to the washing station and, after depulping, the coffee rests through a 2 to 3 day water fermentation before washing and drying on raised beds for 7 to 10 days. This terroir and processing outline a cup that is clean, bright, and expressive of Gedeb's character. It tastes like lavender, tangerine, and a tea-like finish, with bright acidity and a gentle sweetness. The washing process highlights the origin's Heirloom varietals Korume and Wolisho and the clarity of the Gedeb terroir, offering a cup that is approachable for curious home brewers while still rewarding with depth.
