Little Wolf partnered with the Aromas del Valle cooperative in Cajamarca, Peru to share a washed Typica grown at 1750 meters and sourced through Crop to Cup. In this region, washed processing is the norm, and it’s used to spotlight the terroir rather than the fruit of fermentation. Cherries are depulped and rinsed before drying, which tends to emphasize clarity, delicate sweetness, and a tidy finish. The cooperative is young and forward-leaning, pairing agronomy support with improvements like resurfaced fermentation tanks so producers can hit cleaner, more consistent cups year after year.
The roaster describes the taste as pear, custard, and clean. In the cup, that might remind you of gentle pear-like sweetness, a soft, creamy center, and a bright, effortless finish.
