Moonwake Coffee Roasters presents a Gesha from the Lamastus Family’s El Burro Estate in Boquete, Panama, a high-elevation farm tucked against Barú Volcano National Park where cool nights and young volcanic soils slow ripening and concentrate flavor. This lot sits at 1600 to 1700 meters and showcases the farm’s distinct microclimate and careful stewardship.
For this natural lot, the Lamastus team used their Anaerobic Slow Dry process. Whole cherries rest in sealed tanks for about three days before a measured dry, a method that tends to heighten aromatic clarity while layering in wine-like texture. The roaster describes the taste as chardonnay, sparkling red grape, and blackberry. In the cup, it tastes like bright fruit with a gentle sweetness and a silky feel, translating those notes into a spectrum of citrusy lift, grape-like juiciness, and ripe berry depth. Expect a light roast that keeps the profile crisp and expressive without tipping into heaviness.
