Moonwake Coffee Roasters presents Moon Shadow Natural #3 from Alo Coffee, a tiny auction lot grown by Debebe Dangura in Alo Village, Sidama and produced by Tamiru Tadesse’s team. At 2,421 meters with variety 74158, this coffee was part of Alo’s first private auction, Echoes of the Peak, designed to highlight terroir through careful drying rather than extended fermentation. Uniformly ripe cherries are dried in shade to about 20 percent moisture, then moved to a light-deprived room with controlled ventilation for 57 days until they reach 11 percent. The result is a remarkably clean, delicate natural that privileges clarity and depth.

We selected this as our first auction win to showcase how exacting process can shape flavor without noise. The roaster describes the taste as bergamot, raspberry, dragonfruit, and rose. In the cup, it tastes bright and precise with citrus lift, red-fruited juiciness, and a gentle floral finish. It might remind you of citrus zest, fresh berries, and a soft rose bouquet that becomes more expressive as the coffee cools.
