This coffee was crafted by Banko Chelchele, located in the Gedeo Zone of Gedeb Woreda, where the altitude, soil, and climate create ideal conditions for growing exceptional coffee. The processing station employs stringent quality control measures to ensure the highest quality. The harvest begins with hand-picking the ripest cherries, which are sorted for quality and density before undergoing a cold anaerobic fermentation process in sealed, pressurized tanks for 7-10 days. The coffee is then dried on raised beds until it reaches the ideal moisture level. The roaster describes the taste as fruity and sweet, reminiscent of blueberry and lavender, with creamy Cool Whip vibes and a quick, clean finish that will keep you coming back for more.
