From the high regions of Santa Barbara's El Cedral, Honduras, the creators at Black & White Coffee Roasters present a dynamic cup, Ramon Rodriguez - Washed, sparked from the ground of La Bendición farm. The roasters coupled the traditional Washed process with high altitude conditions at 1580 meters above sea level to spotlight the brightness and delicacy intrinsic to this Pacas & Bourbon lot. The cherries embark on an exacting journey post-harvest: depulping on the very day they are picked, followed by dedicated dry fermentation in concrete receptacles, and a meticulous triple-rinse, culminating in a solar drying phase to attain about 9.5% moisture content.

A sip of this brew might remind you of a candy apple dipped in hazelnuts, echoing the roaster's tasting notes of a pulpy red apple silhouette softened by luscious candied hazelnut, hints of plummy dates, and a drizzle of molasses-like brown sugar.
