The lots originate from Buesaco in the Nariño region, grown at around 2100 meters above sea level. The roaster partnered with Promotora de Cafés de Altura to assemble a blended lot drawn from several producers including Amelio Santacruz, Melky Chávez, Pastor Ezequiel Gómez López, and John Gómez. The farms behind this profile—El Guayabo, El Muro, La Esperanza, and Guayacana—share a commitment to quality in rugged mountain terrain.
The harvest process features careful selection of ripened cherries, flotation to separate lower quality fruit, and fermentation in tanks with regular monitoring before drying the beans either mechanically or under sun.
