Color Roasters presents a singular Pink Bourbon from producer Beto Narváez in Cabeceras, Huila, grown at 1,550 meters. Pink Bourbon is prized in southern Colombia for its high-toned florals and clean sweetness, and this lot leans into that character with remarkable clarity for a light roast.
The cup’s definition comes from a meticulous multi-stage washed process. Narváez hand-sorts ripe cherries, floats them to cull defects, then begins fermentation in-cherry for 18–20 hours in sealed GrainPro. After depulping, the parchment rests again in sealed bags for 48–50 hours before an eco-pulper wash using 45–50°C water for a gentle “thermal shock.” Shade drying in an upper-level canopy preserves aromatics and keeps the structure crisp. In Huila, where slow ripening at elevation concentrates sugars, this approach nudges Pink Bourbon’s floral and spice tones to the foreground while keeping the finish bright and precise.
