The roaster partnered with Paola Trujillo to bring her washed Wush Wush from Patio Bonito in Caldono, Cauca to Enjoy Coffee Roasters. This coffee comes from a family farm with decades of coffee heritage, and Paola has sharpened fermentation and processing techniques, including thermal shock and anaerobic modulations, to shape the cup. The result is a coffee that reflects careful stewardship of soil, people, and precision in processing. Origin and terroir set the stage. Caldono sits at 1650 meters above sea level in Cauca, a region known for bright, clean cups. Wush Wush is a rare Colombian varietal believed to trace its origins to Kaffa, Ethiopia, and this lot carries that lineage in its florals and citrus profile. The roaster notes describe big florals and citrus soda brightness alongside some stone fruit sweetness, a combination well suited to a high altitude Colombian profile. Tasting and approach: It tastes like limey citrus upfront with an effervescent acidity and lavender lift, which the roaster describes as Sprite vibes, followed by apricot stone fruit sweetness as the cup cools. The balance of sweetness and acidity is clear in this profile, with floral aroma lifting the cup and a crisp, refreshing finish that invites another sip. The Washed processing method anchors the cup in clarity while allowing the origin and variety to shine through.
