This coffee was crafted by George Howell Coffee in partnership with Daterra to showcase Sundrop, a Brazil coffee born from a visionary approach to sustainability and quality. The roaster partnered with Luis Pascoal, the farmer behind Daterra, whose leadership and environmental policies shape every harvest. Sundrop is processed with a natural method that allows the fruit to shine, a choice that highlights sweetness and nuanced fruit notes rather than harsh acidity.\n\nFrom Cerrado at elevations around 3600 to 3900 feet, the farm grows Red Bourbon and Yellow Bourbon. Natural processing is traditional in this dry climate and Daterra allowed the cherries to ripen fully on the tree before drying on raised beds. Absorption of starches during the drying process yields a full bodied cup with exceptional smoothness and sweetness. The roaster notes it as a profile of butterscotch, blueberry, clove, and a touch of guava.\n\nFor home brewers, this light roasted coffee offers clarity in drip and pour over with balanced sweetness and a clean finish. The roaster designed Sundrop to preserve origin character while showcasing the fruit notes from the natural process. This cup pairs well with a light pastry or a fruity breakfast to complement its sweetness.
