The roaster partnered with Descafecol in Manizales to decaffeinate this batch using a sugarcane derived ethyl acetate process. Green coffee is steamed to increase cell permeability, then cycled through EA extraction to remove caffeine. The coffee is re steamed to remove residual solvent and dried to original moisture content, achieving 97% caffeine removal while preserving structural integrity. This lot is composed of coffees sourced from multiple smallholder producers across Santa Maria and Pitalito in Huila. Individual lots undergo repeated cupping evaluations at purchasing stations and centralized warehouses prior to aggregation, ensuring consistency in sensory profile and defect control across the final blend. In terms of the cup, the roaster notes a clean, balanced profile with the warmth of the washed process and a smooth finish.
