The roaster partnered with Baragwi Farmers Cooperative Society to bring Guama AA Washed from Kirinyaga, Kenya. This lot comes from Guama Factory, built in 1974, serving just over 1,000 producers, many of them women who tend an average of 85 trees each, often intercropped with avocado, banana, and macadamia, providing ample shade. Coffee cherries are handpicked and delivered to the factory within seven hours for depulping via eco-pulper and then fermented for 24 hours before a secondary soak.
Multiple washings with fresh water and a final float-sort ensure density and clarity, followed by slow drying on raised beds for 10 to 14 days. Ample water is provided to the factory via the Kaboyo River. Elevation is 1620 MASL and the coffee is processed using Washed methods, which highlights the region's terroir and produces a clean cup with pronounced clarity. At this altitude, cherries ripen with a balance of sweetness and bright acidity that the roaster aims to showcase in the final cup. In the cup, it tastes like bright citrus and honeyed fruit with a clean sweetness and a smooth finish.
