The Sudan Rume from Hydrangea Coffee Roasters comes to us from the producer duo Rigoberto and Luis Eduardo Herrera, who cultivate their crops in Finca Las Margaritas, a region nestled within the famed Cauca, Colombia. The coffee cherries grown here benefit from the elevation range of 1570-1850 meters above sea level—traditionally leading to a slower maturation process and then resulting in a more nuanced balance of flavors. A hybrid washed process was employed, combining traditional washed methods with modern innovations to develop a unique flavor profile.
