Little Waves partnered with Anny Ruth to bring Loma La Gloria Unicorn through a natural processing from El Salvador. This seventh and final year of Unicorn Process Red Bourbon is described by the roaster as tasting like plum, dried apricot, and peach green tea, rounded with a date caramel sweetness and a lush, velvety body.
Origin and terroir:
The farm sits within the El Boquerón crater of the San Salvador volcano at 1,400 to 1,700 MASL, where volcanic soils and generous shade trees create a coffee-growing habitat that rewards patient maturation and vibrant, balanced cups. This region is known for its high altitude and rich soil, which together with the natural process contributes to the cup's juicy sweetness.

Natural processing is central to this cup's character. It tends to lift fruit-forward notes while yielding a soft, balanced acidity.
