El Vergel Estate Decaf from Elias and Shady Bayter delivers a fruit forward decaf experience from Tolima, Colombia at 1750 meters. The roaster describes a watermelon infused honey process followed by Swiss Water decaffeination. For this lot, cherries undergo a 48 hour anaerobic pre fermentation in sealed bags, are depulped to mucilage, and are co fermented with yeast while infused with watermelon flavors. The beans are pre dried on patios, then mechanically dried and given a 30 day stabilization before decaffeination.
In the cup the roaster describes a pink gatorade type sweetness with refreshing effervescence and a tart green kiwi note that keeps things bright, finishing with a cooling citrus mint quality reminiscent of a mojito.
