This coffee was crafted by PERC Coffee in partnership with Tracon, a mill known for density sorting, size grading, and optical color sorting to ensure top quality. Suke Werekata is a remote village in the Uraga district of Ethiopias Guji Zone, where high elevations and a conducive climate help cherries ripen densely and with character. Harvest begins with handpicking the ripest cherries and transporting them to the washing station for density sorting. The coffee is then fermented anaerobically for 72 hours before being laid on raised beds to sun dry to around 11 percent moisture. This lot sits between washed and natural Ethiopia in its profile, delivering juicy notes that the roaster describes as apricot, nectarine, and sweet raspberry with a tropical energy.
