Postern Coffee introduces its first Peruvian release from Delia Capquique Quispe, an organic producer and 2018 Peru Cup of Excellence winner in the highlands of Puno. Grown around 1,500 meters on a farm named for her daughter, Delia cultivates mostly Bourbon with some Caturra, and this lot was selected for its clarity and lift. Sourced with Crop to Cup, itβs a snapshot of why southern Peru has been turning heads for quietly bright, sweet profiles.
Processing keeps things classic. A clean washed approach strips away fruit before drying, which tends to emphasize crisp structure and transparent sweetness. At this elevation, slower cherry development supports acidity without harshness, so the cup reads focused rather than flashy.
The roaster describes the taste as cranberry and black cherry with a caramel-toffee finish and a sparkling acidity reminiscent of Asian pear. In the cup, it tastes bright, clean, and sweet with a medium body. It might remind you of dark red fruit, a touch of pear-like sparkle, and a toffee sweetness that lingers. Region Puno.
