At Postern Coffee the roaster partnered with Doris at Little Swamps Estate to bring Little Swamps Estate Kenya Washed. This coffee comes from the highlands of Kenya, grown at about 2277 masl in the Western Rift Valley beneath the Cherangani Hills, where the soil and climate shape a quiet resilience in the cherries. Doris transformed land once exhausted by wheat and barley through careful soil testing and organic practices while building a community around the farm. The washed process finishes on raised beds after a gentle water rinse, contributing clarity and brightness to the cup. It tastes like syrupy red fruits such as raspberry and black currant, with lime citrus acidity and a sweetness reminiscent of turbinado raw sugar. The roaster describes the taste as balanced with a clean, lingering finish. This cup reflects the region's terroir by combining high altitude brightness with the precision of a washed process that keeps sweetness in check while letting the fruit notes shine.
