Postern Coffee is showcasing a lot from Mulugeta Tsige, a 2020 Cup of Excellence winner who runs a washing station in Aricha. He collects cherry from outgrowers in Aricha, Gerci, Adame, and Koke, and keeps quality high by sorting at each collection point, paying a dividend to encourage fully ripe cherry, and employing defect pickers for an extra pass at the station. At 1950 to 2100 meters in Yirgacheffe, slower ripening concentrates sugars, and local varieties like 74158, Kurume, Dega, and Wolisho help deliver the classic elegance this region is known for. This coffee was sourced by Crop to Cup.
The process is natural, which means the fruit dries intact on the seed. That typically amplifies sweetness and body and can bring out more expressive aromatics. The roaster describes the taste as blueberry with hints of rosé wine and lavender. In the cup that might remind you of ripe berry sweetness, a gentle wine-like acidity, and soft floral aromatics. It tastes like a sweet-fruited Yirgacheffe with balanced acidity and a lingering, perfumed finish.
