Prodigal partnered with Valentin Orosco to present Ollancay, a washed SL-9 coffee from Cusco, Peru. Harvested by Valentin, the cherries were pulped immediately, underwent a brief fermentation, washed to remove mucilage and dried on raised beds for 15 to 20 days while Valentin maintains shade trees that provide habitat for native birds; the roaster describes the cup as plush and rich with flavors of rhubarb, currant jam, and melon.
