Regalia Coffee puts a decaf front and center with a bright, easygoing regional blend from Huila, Colombia. Sourced from farms between 1,400 and 2,000 meters and built on classic Colombian varieties: Castillo, Caturra, and Colombia. This lot was selected to taste like coffee first, decaf second, with the clarity you expect from a washed profile.
Processing is key to how this cup stays lively. After a clean washed process, the coffee is decaffeinated using the EA “sugar-cane” method, which uses naturally derived ethyl acetate to gently remove caffeine while preserving sweetness and aromatics. Think of it as a targeted rinse rather than a scrub. The goal is to keep structure and flavor intact.
In the cup, the roaster describes the taste as opening with white tea qualities before settling into a smooth, almond-butter character. It tastes calm and bright with a soft sweetness and a light, silky body.
