Valor Coffee Roasters met Andrés Martinez at Specialty Coffee Expo 2025 and built this release as a first introduction to his work in Cauca, Colombia, from his farm El Sendero. Andrés brings a biochemical engineer’s precision to coffee, and it shows in how tightly controlled the post harvest work is. The roaster notes a 48 hour fermentation before a two stage drying that stretches over a month, a slower, steadier approach that helps lock in clarity and keep the aromatics feeling focused and refined.
In the cup, Valor describes it as pear, raspberry, and white tea. Practically, that often means it tastes like soft orchard fruit sweetness up front, then it might remind you of bright, gentle berry rather than jammy fruit, finishing with a delicate tea like lift that keeps everything clean and airy. The semi washed process is doing a lot of the work here, giving you washed style definition with just enough extra texture to make the sweetness feel a little more rounded.
