Valor spotlights a striking SL28 from the Chacón family’s Las Lajas micromill in Costa Rica’s Central Valley, grown on the foothills of the Poás volcano. This is a place where cool elevations and volcanic soils build sweetness and lift, and Las Lajas is known for meticulous, sustainability-minded processing that keeps those qualities intact.
The cup’s personality is shaped by a double anaerobic natural process. Whole cherries rest in sealed tanks in two stages to guide fermentation, then dry slowly under close watch.
