Camber Coffee selected this washed lot from Biloya, a long-standing cooperative in Kochere, Gedeo, to showcase why this corner of Yirgacheffe is so prized for elegance and clarity. Biloya’s member farmers deliver ripe cherry daily to the washing station, where careful sorting, slow fermentation in fresh groundwater, and patient raised-bed drying bring a precise, polished profile to the cup. At 1700–2300 meters, the cool highland climate helps cherries ripen slowly, building sweetness without sacrificing that trademark Yirgacheffe lift.

Processing is the point of focus here. Washed coffees from Kochere are known for high-definition florals and citrus. This lot follows that script, with heirloom varieties expressing clean structure and a light, silky body. The roaster describes the taste as honeydew, bergamot, grapefruit, and hibiscus. It tastes like gentle melon sweetness, bright citrus, and soft floral aromatics. It might remind you of ripe honeydew, lemony bergamot, pink grapefruit, and a hibiscus-like tartness that keeps the finish fresh.
