The roaster partnered with Carlos Ramón Díaz on Finca La Esperanza in Pitalito, Huila to craft this Artist Reserve Colombia. This Pink Bourbon is processed with a depulped and dry fermentation method, sitting the coffee in a tiled tank for 45 to 50 hours before gentle washing and greenhouse drying. The result is a coffee that carries the high altitude terroir of 1700 to 1900 meters above sea level and a bright, winey character unique to this lot. The roaster describes the taste as grapefruit, lemonade, rose, and citrus sugar. It tastes like grapefruit and lemonade with a rose like aroma and a citrus sugar sweetness, balanced and clean with a lingering finish. This cup reflects the care in the farm and the extended fermentation that shapes its clarity and complexity.
