Little Waves partnered with Ana María Donneys and Cafe Primitivo to present this Pink Ranger lot from Finca La Primavera in Circasia, Quindío, Colombia. The roaster notes a honey anaerobic fermentation, staged in sealed tanks with carbon dioxide. The process involves 96 hours in cherry, then pulped and returned to the tank for 24 more hours. A consortium of lactobacillus and native yeast shapes the aroma, yielding floral and fruit forward characteristics. In the cup, it tastes like strawberry yogurt, magnolia, pink lady apple, and a papaya finish. The flavor balance leans toward bright sweetness with a crisp acidity that reflects the terroir of this high altitude region and the careful fermentation.
