Paloma Coffee & Bakery partnered with Juan Peña to present a washed exemplar from Zamora Chinchipe. This Juan Peña Yacuri lot comes from the Hacienda La Papaya and the Yacuri farm, where terroir expresses itself in a refined cup. The washed processing is central to how the cup presents its origin and cultivar. Grown at elevations around 1500-1800 meters above sea level, the cherries mature with a calm pace that yields clean flavors and a bright acidity. In this expression, the processing, terroir and cultivar align to reveal a transparent reflection of Juan Peña's work. In the cup, it tastes like dried strawberry, orange zest, and panela. The balance of sweetness and acidity creates a bright, approachable cup that remains clean through the finish. The washed process is central to revealing the terroir of Zamora Chinchipe and the Mejorado varietal's fruit character.
